Every year for Thanksgiving, my mother is on pie duty. And every year that woman cranks out enough pie for a small army. We’re talking pumpkin, apple, custard, pecan, chocolate, peanut butter, and sometimes even minty fudge. It’s inSANE!
But sometimes you don’t want a whole pie, sometimes you just want a bite.
That’s what makes these Apple Pumpkin Pie Bites so perfect! They’re simple to prep, quick to cook, and you don’t even need a pie pan.
I originally found this recipe at The Blond Cook, and using what I had on hand, swapped the apple pie spice for pumpkin pie spice. The addition of pumpkin flavor mixed with the apple gives these treats a little somethin’ somethin’ extra.
So let’s get baking! First things first; gather your ingredients.
For these Apple Pumpkin Pie Bites, you will need:
- ¼ cup packed light brown sugar
- 1 teaspoon pumpkin pie spice, and additional pie spice for sprinkling on top of crescent rolls
- 3 tablespoons butter, melted
- ⅓ cup chopped pecans
- 1 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices
- 1 (8-ounce) can crescent rolls
Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper, coat with cooking spray, or use a Silpat like I have shown below. (PS, if you’ve never used a Silpat Baking Mat before, I HIGHLY recommend getting one. They are amazeballs).
In a small bowl, mix together the pumpkin pie spice and brown sugar, then set aside. Melt the butter, toss the apple slices in the butter, and set those aside as well. Arrange the crescent rolls on your baking sheet, and evenly distribute the sugar and spice mixture onto each triangle.
Sprinkle each triangle evenly with the chopped pecans.
Place an apple slice at the wide end of each triangle, and carefully roll the dough around each slice.
Brush each roll with the remaining melted butter, and dust lightly with additional pumpkin pie spice.
Bake for 10-12 minutes, or until golden brown.
Let cool for 5 minutes before serving, and enjoy!
These Apple Pumpkin Pie Bites are SOOOO YUMMY! They’re perfect for parties, and not nearly as complicated to make as a whole pie. They’d be especially delicious served with a big scoop of ice cream too!
